Minty Mango Salsa

Minty with a bit of a bite.  A colorful accompaniment for grilled or roasted meat, fish and vegetables…or just a bowl of tortilla chips.

Minty Mango Salsa

Ingredients

  • 1 firm, ripe mango, flesh removed and cut into ¼ inch dice
  • 2 tablespoons finely chopped red onion
  • Juice and zest of 1 lime
  • 2 tablespoon mint leaves, chopped
  • 1 tablespoon coriander leaves, chopped
  • 1 birds eye chili
  • Salt and pepper

Instructions

  1. Stir the salsa ingredients together in a bowl. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to mellow.
